Ingredients
Strawberries – cleaned and dried
2-3 Grateful Grahams Original grahams
8 oz vegan cream cheese (Note: this recipe works just as well with “regular” cream cheese, too)
1/4 cup powdered sugar (Note: this makes a pretty sweet filling. You can use less sugar, if desired.)
Dash of vanilla extract
Instructions
- Prepare the strawberries: Remove the stem and scoop out some of the center. Set the berries aside.
- Prepare the grahams: Using a food processor, crumb 2 -3 grahams. (No chunks – just a nice rough crumb.) Set crumbs aside.
- Prepare the filling: Combine cream cheese, powdered sugar and vanilla extract in a mixing bowl. Beat until well-incorporated and fluffy.
- Put it all together: Stuff the center of each strawberry with the filling – you can overfill it. Sprinkle the top of the filled strawberry generously with the graham crumbs. Enjoy! (If you are not serving these immediately, chill until serving.)

MMM… Chocolate Grahams would be delicious on these berries, too!!!!
